Stuffed Banana Peppers

Short and sweet- but still posting. I got the idea for these when I had dinner with my Grandmother at a local Italian chain. Theirs had sausage and ricotta, mine has turkey and Laughing Cow wedges again. Enjoy!! These are super hot. Seed the banana peppers and cut back on the crushed red pepper if you want something not so spicy.  These are amazing– I only regret not making them sooner.

Stuffed Banana Peppers
Serves 4

Ingredients

8 banana peppers, halved
1 T garlic powder
1 T crushed red pepper (reduce this if you don’t want them too hot)
1 t salt
1/2 T Fennel seeds
1/2 C. Italian bread crumbs
1/4 C Parmesan cheese
1/2 C. Chopped parsley
4 Laughing Cow Wedges (I used Garlic Herb)
1 lb ground 99% fat free turkey
4 T shredded mozzarella cheese
1 C. pizza sauce

Directions

  1. Spray your largest glass baking dish with a non-stick spray. Preheat oven to 400 degrees Fahrenheit.
  2. Cut 8 banana peppers in half.
  3. Mix dry ingredients well in a large bowl, then add in chopped parsley. Then add in Laughing Cow wedges and turkey. Mix thoroughly.
  4. Divide turkey mixture into four parts. Carefully add 1/4 turkey mixture to 4 banana pepper halves.
  5. Bake for about 20 minutes, or until mixture reaches 165 degrees Fahrenheit.
